Von Winning is easily our favorite Pfalz producer, and one of the top estates in all of Germany. Winnings is their young vine blend, from vines all over the Pfalz planted to the region's iconic sandstone soils. Notes of ripe peach and ginger leap from the glass, and on the palate there's plenty of classic lime and lime leaf flavor. Mouthwatering acidity and a lush texture make this a perfect pairing for anything spicy (Thai or Indian seem like a natural foil), or a plate of salty cheese and charcuterie.

Xavier Weisskopf's Rocher de Violettes is located in Montlouis-sur-Loire, an appellation that was perhaps overshadowed by Vouvray, its more famous neighbor but has recently come into its own right as source of extraordinary Chenin Blanc. This is a beautiful, classic Chenin, with notes of ripe orchard fruit, dry honey and white flowers. Bone dry and refreshing, it's an ideal match for poultry or seafood, or simply enjoying on its own.

Blaufränkisch, Pinot Noir, and some white varieties. Birdscape is made with what Christian calls “Pink Maceration,” a very light extraction with just a small amount of contact with the skins, to result in a very dark rosé, or perhaps a very light red wine. Christian made just one 3000 liter barrel of this wine.

Engel auf Erden, which translates to “Angel on Earth” is another riff on pink maceration, like Birdscape. It’s a bit closer to a red than the Himmel auf Erden Rosé but has the lift and acidity of a macerated wine.

When it comes to raw material, Christian Tschida has it pretty good. He cultivates 10-hectares of old vines that have been with his family for 4 generations, since the 19th century. The winery is located in the Neusiedlersee part of Burgenland, the eastern most point of Austria, more traditionally known for red and sweet wine production. The soil underfoot consists of sandy gravel, schist and limestone. He says the key to all his wines is the vertical basket press he uses which imparts very light pressure when he presses, comparable that which a hand shake would exert. By doing this he extracts only the best juice from the grapes.
