Hand-crafting sake for 6 generations Koshimeijo has origins dating back to 1845 and still uses traditional recipes and handmade brewing methods to produce a unique style of Niigata sake. Yamashiroya, one of Koshimeijo’s premium brands, highlights the traditional kimoto method of brewing sake (see below) known for producing sake with higher acidity and robust flavors. Koshimeijo’s toji combines the kimoto brewing method with Niigata’s crisp and clean style to create a unique sake experience using some of Niigata’s highest-quality sake rice milled to premium grades. Nakamoto Shuzo started brewing in 1727. The recipe for Prince Nagaya was created around 700 A.D., long before modern brewing methods and the ability to finely polish rice was developed. Prince Nagaya ruled in Nara more than 1,300 years ago. In 1980s, a wooden tablet with six recipes for sake-making were excavated from the site of Price Nagaya's palace. This sake is one of the ancient receipts. This sake is meant to consumed with Ice, sweeter and rich sake. Intense, aromatic aroma evoke papaya, mango, apricot, note of honey and sesame, fermented aroma of miso. Pairs well with Chocolate, ice cream, cake, fried, Steak, lobster, and cream pasta. 59 Takachiyo "Aimachi" Chapter Three

The third sake, 59 Takachiyo from Takachiyo Shuzo in Niigata, is a rare find even within Japan. It's a Muroka Namagenshu Junmai Ginjo, meaning it's unpasteurized, undiluted, and unfiltered, resulting in a fresh and lively flavor. Takachiyo Sake Brewery, located in Minamiuonuma City, is known for its natural mineral water "Ensui" from the foothills of Makihata in Echigo. 59 Takachiyo is a signature brand and it started in 2015. the "59Takachiyo" series is made from varieties of rice each month. They call it chapter, with a consistent rice polishing ratio of 59% using flat polished rice method and using Kyokai 1801 brewing yeast. The series is exclusively distributed in Japan, making it difficult to obtain and often selling out quickly. This unpasteurized "namazake" has a slightly cloudy appearance with bold and robust flavors. The main aromas of green apple and other citrus are accented by white flowers. The light faintly effervescent texture has a subdued sweetness and refreshing acidity. Another fun sake that is a good introduction for beginners. Best to drink from white wine glass to give the flavors room to breathe! Always keep refrigerated and drink chilled. This unpasteurized "namazake" has a vibrant and dynamic flavor that is perfect for a sake newcomer. Fruity fresh apple and pineapple aromas are highlighted by a hint of rice. Rice is called "Ipponjime," a crossbreed of "Toyo" and "Gohyakumangoku" varieties. This sake pairs well with fresh to semi-hard cheeses and matches Spanish, Italian, and French dishes.
