How can I make my bread softer, crispier, or less stale? |Rehydrate Instructions| + from Freezer to Refresh Loaf

Sourdough bread is amazing—it’s like a sponge that comes back to life with a little water and heat! To refresh stale or dry bread, lightly dampen it with water (don’t soak it). Wrap it in aluminum foil, place it in a Dutch oven, or use a roasting pan with a lid. The key is using steam to rehydrate and soften the bread.

Set your oven to 400°F and bake it covered for 10-12 minutes. If it’s soft enough, enjoy it as is! If it’s still too wet, cover it again and bake for a few more minutes. Prefer a crispy crust? After baking covered, remove the foil or lid and bake uncovered for a few extra minutes, keeping an eye on it to avoid burning. Perfectly refreshed bread, every time!

This bread freezes beautifully. Let it defrost then do actions above!

Why do you use Freshly Milled flour and what are the benefits?

I use Freshly milled flours in all my breads because it adds a unique depth of flavor and provides extra nutritional benefits. It  is rich in fiber, which supports healthy digestion and helps you feel full longer. It also contains essential nutrients like magnesium, iron, and B vitamins, which contribute to overall health. Unlike processed flours, freshly milled flour has a lower glycemic index, meaning it causes slower blood sugar spikes, making it a great choice for those managing energy levels. Additionally, freshly milled flour adds a hearty texture and enhances the natural tang of sourdough. While it’s more expensive, I believe the flavor and health benefits make it worth every bite!

Why did you create Happy Belly Sourdough?

I started Happy Belly out of a deep love for bread and a desire for healthier options than what I could find in grocery stores. I’ve always been fascinated by the history of bread and its role as a symbol of nourishment and connection through time. It frustrated me to see how commercialization stripped bread of its nutrition and quality, yet the prices remained high. I believe food should be both nutrient-dense and delicious. Bread-making captured my heart because it’s a hands-on craft—sensitive to ingredients, temperatures, and techniques—and full of endless possibilities. With my "normal" job that is computer-based, I was craving the chance to create something tangible and meaningful with my hands. That’s how Happy Belly was born.

I do not offer gluten-free options currently. I do have many gluten sensitive customers who can consume my 100% freshly milled sourdough loaves.

This process creates its signature tangy taste and irresistibly chewy texture. Beyond flavor, sourdough is gentler on digestion, as the long fermentation breaks down gluten and starches. It also unlocks nutrients like folate and reduces compounds that block mineral absorption. Plus, its natural acidity acts as a preservative, keeping it fresh longer—no additives needed. Sourdough isn’t just bread; it’s bread with character, history, and heart.

How do I store my sourdough to keep it fresh?

Accepted Answer

To keep your sourdough fresh, store it at room temperature in a paper bag or wrapped in a clean kitchen towel to allow airflow and prevent it from getting soggy. I also like to use reusable beeswax wraps. Avoid plastic bags, as they can trap moisture and cause the crust to soften. If you’re not eating it within a couple of days, slice the bread, place the slices in a sealed freezer bag, and freeze them. When you're ready to enjoy, toast slices straight from the freezer or let them thaw at room temperature. Avoid refrigerating sourdough, as it tends to dry out quickly in the fridge. Proper storage ensures your sourdough stays delicious and lasts longer! Rehydrating your bread if it becomes stale is also a great option!
