Country – Indonesia Region – Botolinggo Village, East Java Province Farm – Ijen Highlands Varietal – Komasti, Andungsari, Bourbon, Kartika Process – Natural Cup Score – 85.25 Altitude – 1100 - 1500 masl Tasting Notes : Cherry, strawberry, vanilla, dark chocolate, almond Farm Overview : Kevenka was formed by two brothers Kevin & Kenny Soewondo who are from Surubaya in East Java. They initially started in coffee by opening a cafe in Surubaya and then realised they could roast themselves they opened a roastery. This soon led to them being inquisitive about the supply of green coffee they received and led them to start processing green coffee themselves from the highlands in and around Mt Ijen to supply their roastery. The next natural step was to start selling green coffee in the expanding internal specialty market as well as exporting coffee. Mt. Ijen, Indonesia is a mountain located in East Java, is an active volcano and a popular tourist destination with its crater holding the world's biggest acid lake, bright turquoise in colour, that burns with a blue fire from the sulphur in the water. The coffee farmers that live on these two mountains usually also farm and sell tobacco and other commodities when the coffee season is over. Their grandparents are usually ethnically originally from Madura Island (a smaller island north of Java Island). Many of them speak the Madurese language, even though Javanese is spoken in Surabaya, the closest big city to these two mountains. Kevenka work with 5 areas on Mt Ijen souring their cherry through collectors and their total network of farmers is upto 500. The villages they source from are Cucuk, Aldi, Sutrisno, Sunotoand Lis. This coffee is really delicous and we hope you enjoy it as much as we do. All the coffees come from these 5 sites and then arrive to their processing center in Botolinggo village. Kevenka also have their own small micro dry mill where they will prepare the coffees for final export.

Indonesia - Ijen Highlands

Country – Peru Region – Jaen, Cajamarca Farm – Cajamarca Varietal – Pache, Typica, Caturra Process – Washed Cup Score – 84 Altitude – 1650 - 1850 masl Tasting Notes: Green apple, hazelnut, milk chocolate Farm Overview: This coffee is from smallholders in the high-altitude areas around Jaén, the main city in the Cajamarca region of northern Peru. The region’s rich volcanic soils, tropical rainfall, and ideal climate create significant potential for high-quality Arabica coffee. These smallholder producers harvest coffee during the middle of the season and process it on their farms using hand-pulping machines, fermentation tanks, and patios or raised beds for drying. Once processed, the parchment coffee is delivered to Falcon’s (our import partner) warehouse in Jaén, where it undergoes grading, moisture testing, sample roasting, and cupping. In 2018, Falcon Peru SARL was established as an export company, along with a small warehouse and quality control lab in Jaén. This has helped producers improve drying practices, Falcon installed facilities near the warehouse to ensure optimum moisture levels and preserve cup quality. Farmers delivering their parchment coffee receive immediate quality analysis, a cup score, and an offer price. We hope you enjoy this coffee as much as we are.

Peru - Cajamarca

Country – Colombia Region – Huila Farm – Red Association El Carmen Varietal – Castillo, Caturra and Colombia Process – Sugar Cane Decaf Cup Score – 84 Altitude – 1400-1800 masl Tasting Notes: Dark Chocolate, Orange and Candied peel Farm Overview El Carmen is a town within the Huila district of Colombia where local farmers collectively bring their coffee beans to the processing station which is supported by our friends from Raw Material. Raw Material has a long standing relationship with El Carmen. This relationship has enabled farmers to have access to drying beds and quality control infrastructure and provide a stable coffee price through consistently paying a premium above market price. This enables us to gain access to higher quality coffee that is sustainable for the farmers in Colombia. The Sugarcane decaf process Sugarcane decaffination is often termed as a natural process decaf. Ethyl Acetate is an organically existing compound and by-product found most commonly in the fermentation of fruits, and is present in ripe bananas.The processing plant Raw Material work with in Colombia uses water from the Navado del Ruis (a volcano between Caldas and Tolima) and natural ethyl acetate from fermented sugarcane sourced in the southern region of Palmira, Colombia. This process begins with steaming of the coffee, increasing its porosity, beginning the hydrolysis of caffeine, which is usually bonded to salts and chlorogenic acid in the bean.The beans are then submerged in an ethyl acetate solvent, until 97% of the caffeine is removed. A final steam is then used to lift residual traces of the compound. The ultimate residue which remains is < 30 ppm, which is a level dramatically less than that of a banana! Good decafs are hard to find - this one is delicious so give it a try!
