We test it regularly for purity, and quality. RECIPE: The Process of Preparation starts with the mangoes arriving early 6 AM from the farms to our kitchen-factory. They are mostly plucked the last evening. The first step is sort out the mangoes for any pieces that are damaged, or have ripened, and not good for pickling. After sorting, the mangoes are cut into small pieces, typically 1 inch in size. And immediately dipped into water at normal temperature. Moreover, it’s washed 2-3 times in fresh water before being kept out in the sun to dry for 3 hours. After a few hours, the cut mango pieces are moved into the pickling vessel, and 2 spices are added – Salt & Turmeric. This mixture is left untouched for 24 hours till the moisture from within the mango pickle seeps out. The cut pieces are now ready for the actual process of pickling. A batch of masala is prepared, mixing all the spices in their appropriate proportions. And added to these cut pieces covered in salt & turmeric, along with mustard oil. Everything is mixed well. The pickle now needs to be sun-dried for 8-10 days before it’s ready to be stored in martabans. It’s made sure that the top of pickle, when it’s inside in the martabaan, has an inch thick layer of oil to protect it. Some of the traditional ways this pickle is enjoyed in Mithila includes with Khichdi, Choora Dahi (Flattened Rice with Curd), Dal-Chawal, Poha, Paratha, Poori Sabzi, and with most Indian dishes. RECIPE: How we make the Aam ka Sukha Achar The Process of Preparation is inspired by the traditional techniques Kalpana observed her mother-in-law Tarini use to prepare this dry mango pickle. Typically, the mangoes for this pickle arrive in the evening around 7 PM, after being plucked from the trees on the same day. Immediately they are sorted in size categories. The small mangoes are not used for this pickle. Selected mangoes should be big enough to cut out 4-6 large pieces (2 inches * 1 inch). The next morning, work begins by cutting the mangoes. As soon as a mango is cut, it’s dipped into water to take away the heat inside the mango. After 5-10 minutes pass, the cut mangoes are washed again 2-3 times before being spread under the sun for a couple of hours to dry out the moisture. After a few hours, turmeric and salt is added to the cut mango pieces. And this mixture is left untouched for 12-48 hours. The moisture within the mangoes drains out in form of tangy juice which is separated. At the same time, a masala mix is prepared by adding together about a dozen different spices, and mustard oil. Everything is mixed well, till the masala blends together. The proportion of spices used is based on Kalpana’s experience. Tangy water that drained out of the mangoes is also mixed into the masala. After the time has passed, the cut mangoes are taken out and the masala is wrapped around the inner side one piece at a time. It’s a tedious process, and takes time. Finally, this cut piece of mango with masala wrapped around it is dipped into oil, and spread out on top of a bamboo soop as seen below. This pickle is now ready for sun-drying for 6-10 days. Once through the sun-drying phase, it’s stored in glass martabaans before being send to our customers. This pickle is slightly saltier than the other ones on our store, as salt and turmeric act as the chief preservatives and not oil. When you go to villages in Darbhanga, Madhubani, or any nearby areas, you’re likely to be welcomed with Chora Dahi & this sookha bharua pickle. More so, during or just after monsoon. Aam ka Sookha Bharua Achar | Dry Stuffed Mango Pickle

Made with comparatively less spices and oil, the perfect grated mango pickle from Mithilanchal, Bihar. Mildly spicy & heat, and a lot of tanginess. In one word, KHATTA! Ingredients used in Grated Mango Pickle Include Raw Mango, Mustard Oil, Turmeric, Red Chilli Powder, Coriander Powder, Cumin, Nigella Seeds, Carom Seeds, Fenugreek, Fennel Seeds, Yellow Mustard, Asafoetida, Black Salt, Salt. Mango varieties used for production of this pickle includes Malda, and Kalkatiya. These two varieties are specially chosen as they have significant amount of pulp, and tanginess. Spices are mostly sourced locally from farmers, and bazar samitis in Samastipur. We buy whole spices and clean, roast, ground them in our kitchen-factory. The Process of Preparation, starts with the mangoes arriving to our kitchen-factory, freshly plucked from the tree on last evening. The first step is sort out the mangoes for any pieces that are damaged, or have ripened, and not good for pickling. Once sorted, the mangoes are peeled completely. It is washed a couple of times in the water, and left in the sun for a few hours. Thereafter, the mangoes are grated completely in a grinder, and kept in a mixing vessel. Immediately the grated mangoes leave their moisture which is separated and discarded. After a few hours, the grated mango is ready for adding Salt & Turmeric. This mixture is left untouched for 24 hours. Parallelly, a batch of masala is prepared, with the spices in the right proportions. Once the 24 hours have passed, the masala is mixed with the grated mangoes, and oil. The mixture is left out in the sun for 7-10 days. It’s tasted for perfection, and is thereafter stored in the martabans. In Mithila, we enjoy this pickle with dal-roti, khichdi, poori-bhujia, chawal-dal, jhaal murhi, and most of the daily meals. A perfect pickle to go along with all your evening snacks - with samosas, namkeen matri, you name it. Khatta & Meetha, this pickle is a delightful surprise with every bite. Mango Pickle Ingredients Raw Mango, Sugar, Red Chilli Powder, Cumin, Fennel Seeds, Carom Seeds, Nigella Seeds, Fenugreek, Cardamon, Cloves, Pepper, Salt. How we make the Mango Pickle: Mango varieties used for production of this pickle includes Malda and Kalkatiya. They are all tangy & juicy varieties grown in Darbhanga district. Spices are mostly sourced locally from farmers, and bazar samitis in Samastipur. We buy whole spices and clean, roast, ground them in our kitchen-factory. The production process begins with raw green mangoes arriving early morning. As soon as they arrive, sorting begins. We normally select mangoes as long as they are not completely ripened. The mangoes are peeled, and washed a couple of times. After it has been left in the sun for a couple of hours to dry after washing, the whole peeled mango is cut into small pieces. And salt is added to it. The salted cut mangoes are left untouched for a couple of mangoes, and thereafter sugar is added. The quantity of sugar is about equal to the weight of the mangoes. After a couple of hours, the mixture of salt, sugar, and mango moisture turns thin. Now, this mixture 10 KG at a time is cooked for around 30 minutes on low flame. We also add the spices to the mix while cooking. In about half an hour, the mangoes turn soft, and the चासनी thickens. This is a very tricky pickle to store. The martabaans used to store this pickle are washed twice, left in the sun for 3 days, and then heated over a slow flame for 30 secs before being used for storage. In Mithila, Mango Khatta-Meetha is the go-to chutni / pickle to eat with Samosas in the evening. Kids love this pickle with poori, paranthas, and almost everything else.
