Karahi is undoubtedly one of the most loved curries of Pakistan, found throughout the country. It takes its name from a thick scoop shape cooking pot traditionally made of cast iron. Chicken is stir-fried in a rich tomatoey base with a distinct black pepper flavour finished off with slivers of ginger. We have taken inspiration from the famous Butt Karahi in Lahore and recreated the dish with a simple one-pot process. Butt Karahi (The King of Karahi)

Palak Paneer is an internationally famous spinach dish made with Paneer (a type of cottage cheese). We recreate this winter season favourite, with fried chunks of paneer and a spinach gravy gently infused with spices. Vegan Adaptation Paneer can be replaced with boiled potato cut in cubes or halved baby potatoes. Alternatively, you can also use tofu. Ghee can be replaced with vegetable oil of your choice. Palak Paneer (Spice Infused)

It’s rich! Buttery, creamy, and full of flavour, popular in the Punjab region of Pakistan. Traditionally, it is prepared by slow cooking lentils over a wood fire for several hours with a lot of “Makhan” (a type of Butter made from fresh buffalo milk cream). Here is our take on this Daal made with Urid and White Kidney Beans. Pair it with our pre-portioned beans Daal Makhani Mix (sold separately). Vegan Adaptation Ghee and Butter can be replaced with vegetable oil of your choice. We only use the cream for garnishing so that can be skipped. Daal Makhani (Rich and Creamy)

Baingan Bharta is a simple yet satisfying Pakistani vegetarian dish, essentially meaning mashed Aubergine (or Eggplant). It is a smoky flavoured curry, where the fire-roasted aubergine studded with garlic and green chilli is infused with a small collection of spices. There is something about roasting Baingan on an open flame to give it a charred skin, that gives it an incredible flavour. Baingan Bharta (Smoky Aubergine)

Lahori Chikar Choley is a classic street food dish from Lahore, taking its name from the Punjabi word “chikar” which means muddy or mushy. It is a golden-brown spicy curry, with a mushy texture and a distinct tangy flavour, owing to the use of dried green mango powder. Traditionally eaten for breakfast with pooris but the one that makes for an incredibly wholesome meal at dinner as well. Mughlai Qorma is a quintessential and delicious recipe from the royal kitchens of Mughals. Word has it, it was served to Shah Jahan the emperor and his guests on the inauguration of the Taj Mahal. It is a rich, creamy yogurt-based curry where the meat is braised with a mix of aromatic spices, nuts, and caramelised onions. Traditionally, Mughlai Qorma was always slow-cooked in copper utensils over charcoal fire to enhance flavours of the dish and served in the best of silverware.
